You know those mornings where you just need a little pick-me-up? Whether you might have been out late, been a little tipsy, or simply had a bad night… We’ve all had them.
And I think I found the solution this morning.

Yes, that’s right. Pancakes.
(And, for the record, they have made this Super Bowl Sunday amazing, and it’s only 11!)
Homemade, totally-from-scratch Pancakes
Adapted from a random recipe on the Big Oven iPhone app
1 1/2 C all-purpose flour
2 T sugar
2 t baking powder
1/2 t baking soda
1/2 t salt
1 1/2 C milk
2 eggs
1 T vanilla (or more because vanilla is awesome)
2 T vegetable oil
Mix dry ingredients together in a bowl. Make a well in the center and pour in the milk, along with the two eggs (already beaten!) and vanilla. Whisk until batter comes together, but is lumpy. Be sure not to overmix.
Heat a frying pan over medium-high heat, and melt a little butter in the skillet. (You want just enough to coat the bottom of the pan.) Pour 1/4 to 1/2 a cup of batter into the pan and cook until numerous bubbles appear on the surface. Flip. Cook for another two minutes (give or take), then flip the pancake onto a plate. Serve with warm maple syrup.

I may or may not have promised the boy pancakes today earlier in the week without realizing what was going to happen last night. It was absolutely ridiculous, and while I’m still paying for it, these pancakes brightened my morning. And my day will continue to brighten as we start the gumbo, eat the gumbo and hopefully cheer the Saints on to victory. (Who dat!)

Ooo YUM!! I wish I saw this post before I had breakfast this morning because now I want to make pancakes! I should try this recipe next weekend. My favorite lazy Sunday is scrambled eggs with ketchup & a piece of toast.
Those look super delicious! My favorite thing to do with pancakes is to add a touch of cinnamon & nutmeg to them — makes them taste that much fancier, without any added effort!

Rebecca! I'm so happy you're back in the game! I was actually wondering
about you the other day, as strange as that sounds, because I've gotten into
the wedding shooting business and am helping out a few friends and local
photographers here and it reminded me of a conversation we had once upon a
time.
I've never added cinnamon and nutmeg to pancakes before. I might have to

Nothing beats pancakes, especially homemade ones. Yours sound delicious ( and I agree, I always add a little more vanilla).
Love, love, love pancakes. They're ALWAYS the best from scratch. Your's came out much better than mine usually do (I'm a terrible flipper). I'll have to try your recipe next time.
I'm usually just a cereal person. It's really hard to get out of that rut. But I LOVE Sunday morning coffee and reading. So relaxing.

You and me both, and I definitely agree! The only reason I'm a semi-decent
flipper is because I flipped thousands (literally thousands) of pancakes at
my sorority's annual pancake breakfast all four years of college. You can't
help but get good with that kind of practice.
It really is relaxing! And I used to be a cereal person, too, so I know
about breaking that habit. It's tough!
Sad face. You'll have to come down here, and I'll teach you when to flip.

I love pancakes with bananas, but I never make them homemade, I want to try that recipe.
Give it a shot! I'm allergic to bananas, so that's a no-go for me, but
I'm a big fan of strawberry pancakes. Writing about them kind of makes
me hungry.
